The 2005 Red Cap Reserve is a Port style dessert wine that originated with the Late Harvest Zinfandel grapes picked at the end of October. 2005 was a very early and long harvest season which enabled the 2nd crop Zinfandel grapes to ripen and concentrate flavors as the river fog in the later harvest season encourages the growth of Botrytis cinerea, the "noble" mold which intensifies the fruit sugar.
The fermentation was stopped at about 5% residual sugar with the addition CCOF Certified Organic Grape Spirits. The resultant fortified wine aged in 3 new American oak barrels for 3 years before bottling in September 2007.
This gorgeous Ruby Port is packed with late harvest Zinfandel flavors and can be enjoyed now or many years to come.
